Made healthy Korean 된장찌개 (doenjang jjigae) for a really late dinner today! It’s super simple and good for you because it’s packed with vegetables. I didn’t add tofu to mine because of my thyroid concerns (thankfully, soybean paste doesn’t have as much of an effect on thyroid since it’s fermented).
